Quiche cups recipe
Ingredients
6
strips of bacon1 T olive oil
6 Mushrooms chopped – 1 for garnish
Salt and black pepper
2 cups baby spinach
Pinch ground nutmeg
4 large eggs
¼ cup milk
½ cup of grated cheese
Directions:
Preheat oven 180 degree C. Coat 12-cup muffin
pan with cooking spray. Fry bacon until crispy and chop. Fry mushrooms until
light brown. Remove from heat and stir in spinach for about 2 min. but must
still stay bright green. Set aside to cool. Whisk egg, milk, salt and pepper
well. Stir in the cheese. Mix all together. Divide mixture evenly between the
muffin pan, fill them halfway. Garnish with a slice of mushroom. Bake until
quiches are well risen, golden brown for about 20 – 25 min. Cool in the pan and
serve warm.
