Beet en Feta Slaai


 

Vrolike slaai vir die somer en so lekker maklik

BEETROOT AND FETA SALAD

4 medium beetroots (ek het die beetslaai gemaak so 'n paar dae vroeër en dit gebruik)
60g feta cheese
2 tablespoons roughly chopped parsley
Lemon Vinaigrette  (resep volg)
Walnuts
Lettuce

Boil the beetroot on medium heat for 45 minutes or until it can be easily pierced through with a knife.  Peel the beetroot and chop into cubes.  Cut the fetta in cubes.  Roughly chop the parsley.
Place the beetroot, feta and parsley on a bed of lettuce.  Roughly chop the walnuts and sprinkle over the salad.  Serve with the lemon vinaigrette.

For the lemon vinaigrette, mix all the ingredients together in a bowl and whisk slightly:
3 tablespoons lemon juice
3 tablespoons olive oil
2 garlic cloves - minced 
½ teaspoon black pepper
½ teaspoon salt

Wenk:  Ek het die beet ingelê so 'n paar dae vroeër en dit gebruik.
