ETHEL’S MOM’S ROCK BUNS
For 10 – 12 buns
226g Self Raising Flour
113g Butter
113g Sugar
113g Dried Fruit
1
Egg
Milk to mix
Little castor sugar
Siffe flour
Rub in butter until like fine breadcrumbs, add sugar and fruit.
Stir in beaten egg and enough milk it makes a sticky consistency
Drop mixture in small heaps on a greased tray – allowing room for
mixture to spread during cooking, sprinkle with sugar lightly before baking.
Bak at 218C for 12 – 15 minutes or until crisp and golden brown.
Lift carefully on to wire cooling rack, be careful the cakes are fragile when hot.
To serve – sprinkle with more sugar
To vary – add chopped peel, grated rind of fresh orange or lemon
