Rochell’s Carrot Cake
Ingredients

flour
2 tsp
bicarb
1
tsp
salt
1.5 cups
oil
3 cups
grated carrots
2 tsp
baking powder
2 tsp
cinnamon
2 cups
sugar
½ cup nuts
4 eggs
1 tsp vanilla
Cream Cheese Icing
1 cup
cream cheese (250ml)
2 – 3 cups icing sugar
¼ cup butter
Directions:
Sift together flour, bicarb, cinnamon, baking powder and salt.
Mix together the oil, sugar and eggs and add vanilla.
Add the flour mixture to the oil mixture.
Add carrots and nuts.
Place in 9 x 13 pan or 3 round cake tins.
Place in preheated oven and bake at 180C for about 30 minutes.
Cream Cheese Icing
Mix all together, begin with 2 cups
icing sugar and add more if too runny.
